Quinoa Salad Recipe

First you’ll make your quinoa. I like to use Trader Joe’s brand it takes about 15min.

While that’s cooking chopped up any veggies you’d like to add I used 

  • Green Onion 
  • Tomatoes
  • Cucumbers
  • Parsley
  • Roasted Peppers 
  • Lemon Vinaigrette Dressing (I use the juice of 1 lemon add a little olive oil and some dijon mustard sprinkle salt and pepper then mix it altogether) Poor this over the salad at the very end.
  • Toss with Arugula at the very end and serve
